Cook chicken thighs in an oven-proof pan, add sliced onion, tomato paste, garlic, and thyme, and cook until fragrant and browned. Then, add spaghetti with enough boiling water to cover. Bring to a simmer, cover and pop in the oven until the liquid has absorbed. Sprinkle breadcrumbs and parmesan over the top and drizzle with oil. Remove the lid and place under the grill until the food looks nice and crispy.

Vegetarian Mexican bean and potato bake 

A vegetarian Mexican bean and potato bake is a satisfying dish cooked in one pot loaded with fresh veggies. First, you’ll want to sauté cubed potatoes until cooked. Next, add whatever vegetables you have on hand, such as capsicum, mushrooms, and zucchini. Stir in some spices and a tin of tomatoes, then add pinto, kidney, or black beans. Continue cooking until the beans and veggies are cooked to your liking. Finally, sprinkle on some grated mozzarella, and put the dish back in the oven uncovered until your food is hot and melty.
