How to Make Zucchini and Carrot Fritters: A Healthy Meal for All

Carrot and zucchini fritters (or courgette fritters in NZ, as we Kiwis tend to say) can be a delicious, guilt-free snack that's not just for the kids but for the whole family. We'll show you how to whip up a batch of delicious zucchini and carrot fritters, packing in the goodness of vegetables without compromising taste. 

Ingredients 

To make this recipe, you’ll need a mix of basic kitchen staples and fresh produce:

  • One zucchini
  • Two carrots
  • One egg
  • ½  cup plain flour, gluten-free flour or chickpea flour
  • ½  tsp baking powder
  • ¼  teaspoon garlic powder
  • ¼  teaspoon onion powder
  • ⅛  teaspoon salt
  • ⅛  teaspoon black pepper
  • 2 tbsp olive oil

Prepping the veggies

Start by shredding your zucchini and carrots using a box grater. Place the vegetable mixture in a clean dishcloth or paper towel and squeeze to release as much liquid as possible. Removing excess moisture is the key to cooking crispy vegetable fritters.

Making the batter

Transfer the grated zucchini and carrots into a large mixing bowl. Add the flour, egg, baking powder, onion powder, garlic powder, salt and pepper. Mix everything gently until a thick batter forms. If the fritter batter feels too wet, add more flour to achieve the desired consistency.

Time to cook

Heat olive oil in a large frying pan or skillet over medium heat. Carefully drop about ¼ of a cup of the fritter mixture at a time into the hot pan. Flatten them slightly with a spatula and cook for 3-4 minutes. Flip the patty over and continue cooking until golden brown.

Serve your delicious fritters

Once brown and crispy, remove the zucchini carrot fritters from the pan and allow to drain on a plate lined with paper towels. Serve hot with a dollop of sour cream, hummus or your favourite dip.

Storing and reheating

You can freeze any leftover zucchini carrot fritters (although we don’t think you will). Once completely cooled, pack them in a Ziploc bag or an airtight container. To reheat, place on a baking tray lined with parchment paper and bake in a preheated oven at 190°C for about 10 minutes or until heated through.
